Quick Shrimp with Zucchini Noodles and Cherry Tomatoes

Ingredients (Serves 2)

Shrimp550 g
Zucchini650 g
Cherry Tomatoes350 g
Garlic20 g
Olive Oil45 ml
Basil10 g
Salt2 g
Pepper1 g

Instructions

If using fresh zucchini, spiralize 650g into noodles. If using pre-spiralized, prepare according to package.

Mince 20g of garlic.

Halve 350g of cherry tomatoes.

Chop 10g of fresh basil.

Heat 45ml of olive oil in a large pan or skillet over medium-high heat.

Add the minced garlic and sauté for 1 minute until fragrant.

Add the halved cherry tomatoes and cook for 2 minutes until they just start to soften.

Add 550g of raw, peeled, and deveined shrimp to the pan. Cook for 3-4 minutes, stirring occasionally, until the shrimp turn pink and opaque.

Add the zucchini noodles to the pan and toss gently with the shrimp and tomatoes for 1-2 minutes until the noodles are slightly softened but still retain a bite.

Remove from heat. Stir in 2g of salt, 1g of pepper, and the chopped basil.

Divide the mixture between two plates and serve immediately.
