Quick Shrimp Scampi with Zucchini & Whole Wheat Pasta

Ingredients (Serves 1)

Shrimp200 g
Zucchini270 g
Olive Oil14 ml
Garlic2 clove
Lemon Juice10 ml
Fresh Parsley5 g
Whole Wheat Angel Hair Pasta70 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Bring a pot of salted water to a boil for the pasta. Add the whole wheat angel hair pasta and cook according to package directions (typically 3-4 minutes for angel hair). Drain well.

While the pasta cooks, mince the garlic. If not using pre-spiralized zucchini, use a spiralizer or vegetable peeler to create zucchini ribbons, or thinly slice it.

Chop the fresh parsley.

Heat the olive oil in a large skillet or pan over medium-high heat.

Add the minced garlic and sauté for 1 minute until fragrant.

Add the peeled and deveined shrimp to the pan. Cook for 2-3 minutes per side, or until pink and opaque.

Add the zucchini ribbons/slices to the pan with the shrimp. Sauté for 2 minutes until slightly tender-crisp.

Stir in the lemon juice and chopped parsley. Season with salt and black pepper to taste.

Add the drained pasta to the skillet with the shrimp and zucchini. Toss everything together to combine.
