Quick Shrimp Scampi with Whole Wheat Pasta & Roasted Asparagus

Shrimp350 g
Spaghetti120 g
Asparagus200 g
Olive Oil25 ml
Garlic20 g
Lemon30 ml
Red Pepper Flakes2 g
Parsley10 g
Chicken Broth100 ml

Instructions

Step 1: Preheat oven to 200°C (400°F). Trim the tough ends off the asparagus. Toss asparagus with 5ml olive oil, salt, and pepper on a baking sheet. Roast for 10-12 minutes until tender-crisp.

Step 2: While asparagus roasts, bring a large pot of salted water to a boil. Add spaghetti and cook according to package directions until al dente (approx. 9-11 minutes).

Step 3: While pasta cooks, mince the garlic and chop the parsley.

Step 4: In a large skillet, heat 20ml olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.

Step 5: Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.

Step 6: Stir in chicken broth and lemon juice. Bring to a simmer. Drain the cooked spaghetti and add it directly to the skillet with the shrimp. Toss to combine, ensuring pasta is coated with the sauce.

Step 7: Remove from heat and stir in the chopped parsley. Serve the shrimp scampi immediately with the roasted asparagus on the side.
