Quick Shredded Beef Bowl (Birria-style) with Rice and Beans

Beef Broth300 ml
Cumin2 g
Oregano2 g
Paprika2 g

Instructions

Cut the beef into large chunks. Roughly chop the onion, garlic, tomatoes, and chili pepper. (15 minutes)

Heat a pot over medium-high heat. Add the beef chunks and brown them on all sides, about 5 minutes.

Add the chopped onion, garlic, tomatoes, chili pepper, cumin, oregano, paprika, salt, and pepper to the pot. Cook, stirring occasionally, for 5 minutes.

Pour in the beef broth. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, or until the beef is tender enough to shred.

While the beef simmers, cook the rice according to package instructions. (e.g., rinse rice, add water, bring to boil, simmer covered for 15-20 minutes). Warm the black beans. (Add 20 minutes to cookTime)

Remove the beef from the pot and shred it using two forks. (2 minutes)

Strain the cooking liquid into a separate bowl, discarding the solids. Return the shredded beef to the pot and add a few spoonfuls of the strained liquid to keep it moist. (3 minutes)

Assemble the bowl: Spoon rice into a bowl, add the warmed black beans, and top with the shredded beef. Spoon some extra broth over the beef if desired. (1 minute)
