Ingredients (Serves 2)

Halloumi250 g
Mixed Greens100 g
Tomatoes200 g
Cucumber200 g
Bell Pepper100 g
Red Onion40 g
Olive Oil30 ml
Apple Cider Vinegar10 ml
Basil4 g
Mint2 g

Instructions

Wash and chop the mixed greens (1 minute). Place in a large bowl.

Wash and dice the tomatoes (2 minutes). Add to the bowl.

Wash and dice the cucumber (2 minutes). Add to the bowl.

Wash, core, and slice the bell pepper (2 minutes). Add to the bowl.

Thinly slice the red onion (2 minutes). Add to the bowl.

Slice the halloumi into 1 centimetre thick pieces (1 minute).

Heat the olive oil in a non-stick pan over medium-high heat (2 minutes).

Add the halloumi slices to the hot pan and sear for 3-4 minutes per side until golden brown (8 minutes total).

While halloumi cooks, chop the fresh basil and mint (1 minute). Add to the salad bowl.

Drizzle the apple cider vinegar over the vegetables in the bowl (1 minute).

Divide the salad evenly between two plates (1 minute).

Top each salad portion with the warm seared halloumi (1 minute).
