Quick Seared Chicken Salad with Seasonal Vegetables

Ingredients (Serves 2)

Chicken Breast250 g
Potatoes300 g
Leafy Greens100 g
Cucumber100 g
Tomatoes100 g
Green Beans100 g
Olive Oil25 g
Vinegar15 ml
Fresh Herbs10 g
Salt1 g
Black Pepper1 g
Whole Grain Bread40 g

Instructions

Wash and chop leafy greens, cucumber, tomatoes, and green beans. Set aside.

If using raw potatoes, peel and boil until tender (can be done ahead). Let cool and slice.

Slice chicken breast thinly.

In a small bowl, whisk together olive oil, vinegar, chopped fresh herbs, salt, and pepper for the dressing.

Heat a pan over medium-high heat. Add a small amount of oil if needed (use part of the 25g).

Sear chicken slices for 1.5 minutes per side, until cooked through (3 minutes total).

In a large bowl, combine greens, cucumber, tomatoes, green beans, and sliced potatoes.

Drizzle dressing over the salad and toss gently.

Top the salad with the seared chicken.

Serve with whole grain bread.
