Quick Red Lentil and Paneer Stir-Fry

Instructions

Step 1: Rinse red lentils thoroughly. Dice onion and tomato. Mince garlic and ginger. Chop green beans and carrot into small pieces. Cube paneer.

Step 2: Heat oil in a pan or wok over medium heat. Add cumin seeds and let them splutter (1 minute). Add diced onion, minced garlic, and ginger. Sauté until onion softens (3 minutes).

Step 3: Add diced tomato, chopped green beans, and carrot. Stir in turmeric, coriander powder, red chili powder, and salt. Cook for 5 minutes, stirring occasionally, until vegetables are tender-crisp.

Step 4: Add the rinsed red lentils and about 100ml of water. Bring to a simmer, then cover and cook for 5 minutes, or until lentils are tender. Stir in paneer cubes and garam masala. Cook for another 2 minutes. Garnish with fresh cilantro before serving.
