Quick Pork Tenderloin Strips with Zucchini and Tomatoes

- Garlic10 g
- Olive Oil30 ml

- Pork Tenderloin350 g
- Zucchini300 g
- Herbs10 g
Instructions

Slice the pork tenderloin into thin strips. Season with salt and pepper. Slice the zucchini into rounds or half-rounds. Dice the tomatoes and onion. Mince the garlic. Chop fresh herbs. (6 minutes)

Heat the olive oil in a large pan over medium-high heat. Add the pork strips and sear for 6 minutes, stirring occasionally, until browned and cooked through. Remove pork from the pan and set aside. (6 minutes)

Add the onion to the same pan and sauté for 2 minutes until softened. Add the zucchini and cook for 2 minutes. Add the diced tomatoes and minced garlic and cook for another 2 minutes until vegetables are tender-crisp. (6 minutes)
