Quick Pork Medallions with White Beans and Greens

Ingredients (Serves 1)

Pork Tenderloin150 g
Olive Oil10 ml
Garlic5 g
White Beans200 g
Spinach100 g
Chicken Broth50 ml
Rosemary2 g
Salt1 g
Pepper0.5 g

Instructions

Slice the pork tenderloin into 2-3 cm thick medallions (3 minutes). Season generously with salt and pepper.

Peel and finely chop the garlic (2 minutes). Drain and rinse the white beans.

Wash the spinach (1 minute).

Heat 5 ml of olive oil in a skillet over medium-high heat (1 minute). Add the pork medallions and sear for 3-4 minutes per side until golden brown and cooked through (8 minutes). Remove pork from the pan and set aside.

Add the remaining 5 ml of olive oil to the same skillet (1 minute). Add the chopped garlic and sauté for 1 minute until fragrant (1 minute).

Add the spinach to the skillet and cook, stirring, until wilted (3 minutes).

Stir in the white beans, chicken broth, and rosemary. Bring to a gentle simmer and heat through (3 minutes).

Return the pork medallions to the skillet for 1 minute to warm through.
