Pork Tenderloin250 g
Cabbage200 g
Apple100 g
Olive Oil8 ml
Apple Cider Vinegar10 ml
Mustard5 g
Salt2 g
Pepper1 g

Instructions

Slice the pork tenderloin into 2-3 cm thick medallions (3 minutes). Season the pork generously with salt and pepper (2 minutes).

Finely shred the cabbage (4 minutes). Core and thinly slice the apple (3 minutes).

In a medium bowl, whisk together the apple cider vinegar, mustard, and half of the olive oil (1 minute). Add the shredded cabbage and sliced apple to the bowl and toss to coat (2 minutes). Set aside to let the flavors meld.

Heat the remaining olive oil in a large pan over medium-high heat (1 minute). Add the pork medallions and sear for 4-5 minutes per side, depending on thickness, until browned and cooked through (10 minutes total). Let the pork rest for 2 minutes after cooking.
