Quick Pork Loin Medallions with Braised Cabbage and Potatoes

Ingredients (Serves 2)

Pork Loin150 g
White Cabbage200 g
Potato150 g
Onion0.5 medium
Apple0.5 medium
Vegetable Broth50 ml
Olive Oil7.5 ml
Caraway Seeds0.5 tsp
Salt0.3 tsp
Pepper0.1 tsp

Instructions

Step 1: Slice pork loin into 1-inch thick medallions. Season with salt and pepper. Peel and thinly slice potatoes. Thinly slice cabbage, onion, and apple.

Step 2: Heat half of the olive oil in a large skillet over medium-high heat. Sear pork medallions for 2-3 minutes per side until golden brown and cooked through. Remove pork and set aside.

Step 3: In the same skillet, add remaining olive oil. Add sliced onion, cabbage, and potatoes. Sauté for 5-7 minutes until slightly softened. Add sliced apple, caraway seeds, salt, and pepper. Pour in vegetable broth.

Step 4: Cover and simmer for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp. Return pork medallions to the skillet for the last minute to warm through. Serve immediately.
