Quick Pork Loin Medallions with Braised Cabbage and Potatoes

- Pork Loin150 g
- White Cabbage200 g
- Potato150 g
- Apple0.5 medium
- Vegetable Broth50 ml
- Caraway Seeds0.5 tsp

Step 1: Slice pork loin into 1-inch thick medallions. Season with salt and pepper. Peel and thinly slice potatoes. Thinly slice cabbage, onion, and apple.

Step 2: Heat half of the olive oil in a large skillet over medium-high heat. Sear pork medallions for 2-3 minutes per side until golden brown and cooked through. Remove pork and set aside.

Step 3: In the same skillet, add remaining olive oil. Add sliced onion, cabbage, and potatoes. Sauté for 5-7 minutes until slightly softened. Add sliced apple, caraway seeds, salt, and pepper. Pour in vegetable broth.
