Quick Pork & Cabbage Stir-fry with Flat Rice Noodles

Ingredients (Serves 1)

Pork Loin180 g
Flat Rice Noodles80 g
Cabbage100 g
Soy Sauce15 ml
Fish Sauce10 ml
Rice Vinegar5 ml
Fresh Ginger5 g
Garlic2 cloves
Sesame Oil8 ml

Instructions

Thinly slice the pork loin against the grain. Shred the cabbage. Mince the garlic and ginger. In a small bowl, combine soy sauce, fish sauce, and rice vinegar for the stir-fry sauce.

Cook the flat rice noodles according to package directions (usually 2-3 minutes for fresh or pre-soaked). Drain and set aside.

Heat sesame oil in a large skillet or wok over medium-high heat. Add sliced pork and stir-fry for 3-4 minutes until cooked through and lightly browned. Remove pork from the pan and set aside.

Add minced garlic and ginger to the same pan, stir-fry for 30 seconds until fragrant. Add shredded cabbage and stir-fry for 2-3 minutes until slightly tender-crisp.

Return the cooked pork to the pan. Add the drained flat rice noodles and pour the stir-fry sauce over everything. Toss well for 1-2 minutes until everything is coated and heated through. Serve immediately.
