Quick Pork & Cabbage Skillet

Ingredients (Serves 1)

Pork Loin220 g
Cabbage200 g
Potato150 g
Onion50 g
Garlic5 g
Chicken Broth100 ml
Apple Cider Vinegar10 ml
Caraway Seed2 g
Olive Oil8 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Slice pork loin into 1-inch thick medallions. Season with salt and pepper. Thinly slice cabbage and onion. Dice potato into 1/2-inch cubes. Mince garlic.

Step 2: Heat olive oil in a large skillet or deep pan over medium-high heat.

Step 3: Add pork medallions and sear for 2-3 minutes per side until golden brown. Remove pork from the pan and set aside.

Step 4: Add onion and potato to the pan, sauté for 3-4 minutes until onion softens slightly.

Step 5: Stir in garlic, cabbage, and caraway seeds. Cook for 2-3 minutes, stirring occasionally, until cabbage starts to wilt.

Step 6: Pour in chicken broth and apple cider vinegar. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes, or until potatoes are tender.

Step 7: Return the pork medallions to the skillet, nestling them into the vegetables. Cook for another 2-3 minutes, or until pork is cooked through and heated.
