Quick Pork and Brussels Sprouts Skillet

- Brussels Sprouts600 g
- Rosemary1 g

Instructions

Slice the pork tenderloin into 1-2 cm thick medallions (3 minutes). Season generously with salt, pepper, rosemary, and thyme.

Trim and halve or quarter the Brussels sprouts depending on size (5 minutes). Finely chop the onion and garlic (2 minutes).

Heat half of the oil (25 ml) in a large skillet over medium-high heat (1 minute). Add the pork medallions and sear for 3-4 minutes per side until browned and cooked through (8 minutes total cooking time for pork). Remove pork from skillet and set aside.

Add the remaining oil (25 ml) to the same skillet (1 minute). Add the chopped onion and Brussels sprouts. Sauté, stirring occasionally, until the sprouts are tender-crisp and slightly browned, about 8-10 minutes (10 minutes total cooking time for sprouts). Add garlic during the last 2 minutes of cooking the sprouts.
