Trout fillet (skin on or off)180 g
Green beans150 g
Garlic10 g
Olive oil15 ml
Lemon30 ml
Fresh parsley5 g
Salt2 g
Black pepper1 g

Instructions

Trim the ends of the green beans.

Thinly slice the garlic.

Pat the trout fillet dry thoroughly with paper towels. Season both sides with salt and pepper.

Heat the olive oil in a skillet over medium-high heat.

Add the sliced garlic and green beans to the skillet. Sauté for 5-7 minutes, stirring occasionally, until green beans are tender-crisp.

While green beans cook, add the trout fillet to the same skillet (skin-side down if skin-on). Cook for 3-4 minutes per side, depending on thickness, until fish is opaque and flakes easily with a fork.

Squeeze fresh lemon juice over the trout and green beans.

Finely chop fresh parsley and sprinkle over the dish before serving.
