Quick Pan-Seared Trout Fillets with Sautéed Green Beans and Corn

- Lemon1 g

- Trout Fillet400 g
- Green Beans300 g
- Corn200 g
- Dill10 g
Instructions

Pat dry 400g of trout fillets. Trim 300g of green beans and cut 200g of corn kernels off the cob (or use frozen). Finely chop 10g of fresh dill.

Heat 10ml of olive oil in a large pan over medium-high heat (1 minute). Add green beans and corn, sauté for 5 minutes until tender-crisp. Season with salt and pepper. Remove vegetables from the pan (1 minute).

Add another 4ml of olive oil to the pan (1 minute). Season trout fillets with salt and pepper. Place fish skin-side down in the hot pan and sear for 4-5 minutes until skin is crispy. Flip and cook for another 2-3 minutes until cooked through (7 minutes).

Return vegetables to the pan briefly to warm through. Squeeze half a lemon over the fish and vegetables. Sprinkle with fresh dill (1 minute).

Serve the trout fillets with the sautéed green beans and corn. (1 minute)
