- Cabbage200 g

- Vegetable Broth50 ml

Instructions

Slice 400g pork tenderloin into 2 cm thick medallions. Season generously with 1g salt and 0.5g black pepper. Thinly slice 400g cabbage and 150g apple. Finely chop 100g onion and 10g garlic (Prep: 5 minutes).

Heat 10ml olive oil in a large pan over medium-high heat for 1 minute. Add pork medallions and sear for 2 minutes per side until golden brown and cooked through. Remove pork from the pan and set aside.

Add the remaining 15ml olive oil to the pan. Add the chopped onion and garlic and sauté for 1 minute until fragrant.

Add the sliced cabbage and apple to the pan. Pour in 100ml vegetable broth and 15ml apple cider vinegar. Season with 2g salt, 0.5g black pepper, and 1g caraway seeds. Cover and cook for 4 minutes, stirring occasionally, until cabbage is tender-crisp. (Cook: 8 minutes total for pork and cabbage).
