Leeks100 g

Olive Oil12.5 ml
Garlic5 g
Vegetable Broth25 ml

Instructions

Slice the pork tenderloin into 2.5 cm thick medallions. Season generously with salt and black pepper. Thinly slice the leeks and apple. Mince the garlic. (Prep time: 5 minutes)

Heat 25 milliliters of olive oil in a large non-stick skillet over medium-high heat. Add the pork medallions and sear for 3 minutes per side until golden brown and cooked through. (Cook time: 6 minutes)

While the pork sears, add the sliced leeks, apple, and minced garlic to the same skillet alongside the pork. Sauté for 6 minutes, stirring occasionally, until the leeks are tender and the apple is slightly softened. (Cook time: 6 minutes, simultaneous with pork)

Pour in 50 milliliters of vegetable broth, scraping up any browned bits from the bottom of the pan. Cook for 1 minute until the broth has slightly reduced. (Cook time: 1 minute)
