Quick Pan-Seared Fish with Sautéed Celeriac and Leeks

White fish fillets200 g
Celeriac150 g
Leeks100 g
Olive Oil8 ml
Lemon0.5 g
Dill2 g
Salt1.5 g
Pepper0.8 g

Instructions

Wash and peel the celeriac (3 minutes). Cut the celeriac into thin strips or small cubes (4 minutes). Wash and slice the leeks (rinse well to remove grit) (3 minutes). Pat the fish fillets dry and season generously with salt and pepper (2 minutes).

Heat the olive oil in a large pan over medium-high heat (1 minute). Add the celeriac and leeks and sauté for 8 minutes until tender-crisp, stirring occasionally.

While the vegetables are cooking, heat a separate non-stick pan over medium-high heat with a little more olive oil if needed (1 minute). Add the seasoned fish fillets and sear for 3-4 minutes per side, depending on thickness, until cooked through and flaky (8 minutes total).

Finely chop the fresh dill (1 minute). Squeeze lemon juice over the cooked fish and vegetables (1 minute). Sprinkle with fresh dill before serving (0 minutes).
