Quick Pan-Seared Fish with Cauliflower Mash and Sautéed Kale

Ingredients (Serves 2)

White fish fillets350 g
Cauliflower500 g
Kale150 g
Olive oil30 ml
Plant milk50 ml
Nutritional yeast10 g
Salt3 g
Black pepper2 g

Instructions

Cut the cauliflower into florets. Wash and roughly chop the kale, discarding tough stems. Pat the fish fillets dry. (7 minutes)

Place the cauliflower florets in a steamer basket over boiling water. Steam for 10 minutes, or until very tender. (10 minutes)

While the cauliflower is steaming, season the fish fillets generously with salt and pepper. (1 minute)

Heat 15 ml of olive oil in a non-stick skillet over medium-high heat. Add the fish fillets and sear for 6 minutes per side, or until cooked through and flaky. (12 minutes - 6 mins per side, cook simultaneously with cauliflower if possible)

Once cauliflower is steamed, transfer it to a bowl. Add the plant milk, nutritional yeast, 1 g of salt, and 0.5 g of pepper. Mash with a potato masher or fork until smooth and creamy. (2 minutes)

Heat the remaining 15 ml of olive oil in the same skillet used for the fish (or a separate one) over medium heat. Add the chopped kale and sauté for 5 minutes, stirring until wilted and tender. Season with remaining salt and pepper. (5 minutes)

Serve the pan-seared fish alongside the cauliflower mash and sautéed kale.
