Quick Pan-Seared Fish with Cauliflower Mash and Sautéed Kale

Ingredients
- White fish fillets350 g
- Plant milk50 ml
- Olive oil30 ml
- Salt3 g
- Black pepper2 g
- Cauliflower500 g
- Kale150 g
- Nutritional yeast10 g
Instructions

Cut the cauliflower into florets. Wash and roughly chop the kale, discarding tough stems. Pat the fish fillets dry. (7 minutes)

Place the cauliflower florets in a steamer basket over boiling water. Steam for 10 minutes, or until very tender. (10 minutes)

While the cauliflower is steaming, season the fish fillets generously with salt and pepper. (1 minute)

Heat 15 ml of olive oil in a non-stick skillet over medium-high heat. Add the fish fillets and sear for 6 minutes per side, or until cooked through and flaky. (12 minutes - 6 mins per side, cook simultaneously with cauliflower if possible)

Once cauliflower is steamed, transfer it to a bowl. Add the plant milk, nutritional yeast, 1 g of salt, and 0.5 g of pepper. Mash with a potato masher or fork until smooth and creamy. (2 minutes)
