Chicken Breast300 g
Mixed Greens150 g
Tomato200 g
Cucumber200 g
Pepper150 g
Olive Oil40 ml
Lemon Juice10 ml
Parsley1 g
Salt1 g
Pepper1 g

Instructions

Dice the 300g chicken breast into bite-sized pieces (4 minutes).

Season the chicken pieces generously with salt and pepper.

Wash and chop the 200g tomatoes, 200g cucumber, and 150g peppers into bite-sized pieces (4 minutes).

Wash the 150g mixed greens.

In a large pan, heat 20 ml of olive oil over medium-high heat (1 minute).

Add the chicken pieces and pan-sear for 6-8 minutes, stirring occasionally, until cooked through and browned (8 minutes).

While the chicken cooks, whisk together the remaining 20 ml olive oil, 10 ml lemon juice, chopped parsley, salt, and pepper in a small bowl to make the dressing.

In a large bowl, combine the mixed greens, chopped tomatoes, cucumber, and peppers.

Add the cooked chicken to the salad.

Pour the dressing over the salad and toss gently to combine (1 minute).
