Ingredients (Serves 2)

Chicken breast300 g
Zucchini200 g
Cherry tomatoes200 g
Garlic10 g
Olive oil20 ml
Basil10 g
Salt2 g
Pepper1 g

Instructions

Slice 300g of chicken breast horizontally to create thinner cutlets (approx. 2 minutes). Season with 2g of salt and 1g of pepper.

Wash and slice 200g of zucchini into rounds or half-moons (approx. 2 minutes).

Wash and halve 200g of cherry tomatoes (approx. 2 minutes).

Mince 10g of garlic (approx. 1 minute).

Heat 20ml of olive oil in a large pan over medium-high heat. Add the chicken cutlets and sear for 3-4 minutes per side until cooked through and golden (approx. 8 minutes). Remove chicken from the pan and set aside.

Add the sliced zucchini and halved cherry tomatoes to the same pan. Add the minced garlic and 10g of fresh basil (approx. 1 minute).

Sauté for 2-3 minutes until the zucchini is tender-crisp and tomatoes are slightly softened (approx. 2 minutes).

Return the chicken to the pan and toss gently with the vegetables to heat through (approx. 1 minute).

Serve immediately.
