Quick Pan-Seared Beef with Mushroom Sauce and Buckwheat Groats

Ingredients (Serves 2)

Beef300 g
Mushrooms200 g
Onion80 g
Buckwheat Groats120 g
Vegetable Broth500 ml
Oil20 ml
Flour10 g
Mustard10 g
Salt2 g
Pepper1 g

Instructions

Slice the beef thinly against the grain (3 minutes). Season generously with 2 g of salt and 1 g of pepper.

Slice the mushrooms and finely chop the onion (7 minutes).

In a medium saucepan, bring 400 ml of vegetable broth to a boil. Add the buckwheat groats, reduce heat to low, cover, and simmer for 10-12 minutes until tender and liquid is absorbed (12 minutes).

While the buckwheat cooks, heat 20 ml of oil in a large pan over medium-high heat (1 minute). Add the sliced beef in a single layer and sear for 1-2 minutes per side until browned but still slightly pink inside (4 minutes). Remove beef and set aside.

Add the chopped onion to the same pan and sauté for 2-3 minutes until softened (3 minutes).

Add the sliced mushrooms and cook for 5-7 minutes until they release their liquid and start to brown (7 minutes).

Sprinkle 10 g of flour over the mushrooms and stir for 1 minute.

Gradually whisk in 100 ml of vegetable broth (from the total 500 ml originally prepared, or use fresh if preferred for sauce consistency) and 10 g of mustard. Bring to a simmer and cook for 2-3 minutes until the sauce thickens (3 minutes).

Return the beef slices to the sauce and stir to coat. Heat through for 1 minute.

Serve the beef and mushroom sauce alongside the cooked buckwheat groats.
