Chicken thigh200 g
Zucchini150 g
Quick-cooking couscous50 g
Water100 ml
Olive oil10 ml
Onion30 g
Garlic5 g
Cumin3 g
Smoked paprika3 g
Chili powder3 g
Salt1.5 g
Black pepper0.5 g
Lime10 ml

Instructions

Prepare the couscous according to package directions using water or broth. Quick-cooking couscous usually takes about 5 minutes; keep warm.

While couscous cooks, slice the chicken thigh into thin strips.

Prepare the zucchini noodles (spiralize or use pre-cut).

Chop the onion and mince the garlic.

Heat olive oil in a large skillet or wok over medium-high heat.

Add the chicken strips and cook until browned and nearly cooked through, about 6-8 minutes.

Add the chopped onion and minced garlic to the skillet and cook for 3 minutes until softened.

Stir in the cumin, smoked paprika, chili powder, salt, and black pepper.
