Quick Mexican Ground Beef Skillet with Corn and Peppers

Olive Oil5 ml
Onion50 g
Bell Pepper100 g
Garlic5 g
Tomatoes150 g
Corn75 g
Chili Powder5 g
Cumin3 g
Paprika3 g
Salt1 g
Pepper0.5 g

Instructions

Peel and chop the onion (2 minutes). Wash and chop the bell pepper (3 minutes). Peel and mince the garlic (2 minutes).

Heat the olive oil in a large skillet over medium-high heat (1 minute). Add the ground beef and brown, breaking it up with a spoon, for 6 minutes (6 minutes). Drain any excess fat.

Add the chopped onion and bell pepper to the skillet with the beef. Cook, stirring occasionally, for 5 minutes until the vegetables soften slightly (5 minutes).

Stir in the minced garlic, chili powder, cumin, and paprika. Cook for 2 minutes until fragrant (2 minutes).

Add the tomatoes (diced) and corn to the skillet. Stir to combine. Bring to a simmer and cook for 4 minutes, allowing the flavors to meld (4 minutes).

Season with salt and pepper to taste. Serve hot.
