Quick Mexican Beef & Rice Skillet

Ingredients (Serves 1)

Extra lean ground beef (5% fat)150 g
Dry white rice50 g
Water or low-sodium beef broth120 ml
Canned diced tomatoes100 g
Onion, diced40 g
Bell pepper (any color), diced40 g
Olive oil5 ml
Taco seasoning mix (or blend of chili powder, cumin, paprika, garlic powder)5 g
Salt1 g
Shredded cheddar or Mexican blend cheese (optional)10 g

Instructions

Heat olive oil in a skillet over medium-high heat.

Add ground beef and cook, breaking it apart, until browned. Drain excess fat if necessary.

Stir in diced onion and bell pepper. Cook for 3-4 minutes until softened.

Add dry rice, diced tomatoes, taco seasoning, and salt. Stir to combine.

Pour in water or beef broth. Bring to a simmer.

Reduce heat to low, cover, and cook for 10-12 minutes, or until rice is cooked and liquid is absorbed. Stir once halfway through.

Remove from heat and let stand for 2 minutes, covered.

Fluff with a fork.

Top with optional shredded cheese before serving.
