Quick Mexican Beef and Pepper Stir-fry

Ingredients (Serves 1)

Beef150 g
Bell Pepper70 g
Onion50 g
Zucchini50 g
Corn50 g
Olive Oil10 ml
Garlic5 g
Cumin2 g
Chili Powder2 g
Smoked Paprika1 g
Salt1 g
Black Pepper0.5 g
Beef Broth50 ml
Lime Juice5 ml
Cilantro5 g

Instructions

Slice 150 grams of beef (sirloin or other quick-cooking cut) against the grain into thin strips.

Slice 70 grams of bell pepper, 50 grams of onion, and 50 grams of zucchini into similar-sized strips.

Finely mince 5 grams of garlic.

Heat 10 milliliters of olive oil in a large pan or wok over medium-high heat.

Add the beef strips and stir-fry for 2-3 minutes until browned on all sides. Remove beef from the pan and set aside.

Add the sliced bell pepper, onion, and zucchini to the same pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Add the minced garlic, 2 grams of cumin, 2 grams of chili powder, 1 gram of smoked paprika, 1 gram of salt, and 0.5 grams of black pepper to the vegetables. Cook for 1 minute until fragrant.

Return the beef to the pan. Add 50 grams of cooked corn and 50 milliliters of beef broth. Stir to combine and simmer for 2-3 minutes until the sauce slightly thickens.

Remove from heat and stir in 5 milliliters of lime juice.

Serve immediately, garnished with fresh chopped cilantro (about 5 grams).
