Rice Vermicelli Noodle50 g
Bell Pepper40 g
Onion20 g
Carrot15 g
Lemongrass10 g
Garlic5 g
Vegetable Oil15 ml
Fish Sauce15 ml
Soy Sauce5 ml
Vietnamese Curry Powder2 g
Sugar2 g
Cilantro5 g

Instructions

Bring a small pot of water to boil for the rice vermicelli. Cook noodles according to package directions (usually 3-5 minutes), then drain, rinse with cold water, and set aside.

Thinly slice the chicken breast. Mince the lemongrass and garlic. Thinly slice the bell pepper, onion, and julienne the carrot.

Heat vegetable oil in a large wok or skillet over medium-high heat. Add minced lemongrass and garlic, stir-fry for 30 seconds until fragrant.

Add the sliced chicken breast to the wok and stir-fry until cooked through, about 3-4 minutes.

Add the bell pepper, onion, and carrot to the wok. Stir-fry for 2-3 minutes until vegetables are slightly tender-crisp.

Stir in the fish sauce, soy sauce, Vietnamese curry powder, and sugar. Mix well to coat all ingredients.

Add the cooked rice vermicelli noodles to the wok and toss everything together for 1 minute until heated through and well combined.
