Pork Loin180 g
Potato100 g
Carrot80 g
Parsnip80 g
Onion50 g
Garlic1 clove
Olive Oil10 ml
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Peel and dice potatoes, carrots, and parsnips into 1/2-inch cubes. Chop the onion and mince the garlic. Cut the pork loin into 1-inch cubes.

Heat olive oil in a large skillet over medium-high heat. Add pork loin and cook until browned on all sides, about 4-5 minutes. Remove pork and set aside.

Add chopped onion, diced potatoes, carrots, and parsnips to the skillet. Sauté for 5-7 minutes, stirring occasionally, until vegetables begin to soften.

Add minced garlic, salt, and pepper to the skillet, cook for 1 minute more until fragrant.

Return pork to the skillet. Add a splash of water (about 30ml) if needed, cover, and cook for another 3-5 minutes, or until pork is cooked through and vegetables are tender-crisp.
