Pepper150 g
Zucchini200 g

Olive Oil15 ml

Couscous100 g
Broth200 ml

Instructions

Dice the onion, pepper, zucchini, and tomatoes. Mince the garlic. Chop fresh herbs. (6 minutes)

Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, for 4 minutes until browned. Drain excess fat if necessary. (4 minutes)

Add the diced onion, pepper, zucchini, tomatoes, and minced garlic to the skillet. Cook, stirring occasionally, for 4 minutes until vegetables are slightly softened. (4 minutes)

While the vegetables cook, prepare the couscous according to package directions using the broth. Typically, bring broth to a boil, add couscous, cover, and let stand for 5-7 minutes. (2 minutes prep + 5-7 minutes standing = 7 minutes total for couscous)

Stir the fresh herbs, salt, and pepper into the beef and vegetable mixture. Cook for another 2 minutes. (2 minutes)

Fluff the cooked couscous with a fork. Serve the beef and vegetable skillet over the couscous. (1 minute)
