Quick Chicken Quinoa Bowl with Seasonal Vegetables

Ingredients (Serves 1)

Quinoa60 g
Water300 ml
Chicken breast150 g
Olive oil10 ml
Cumin2 g
Smoked paprika1 g
Chili powder1 g
Salt1 g
Black pepper0.5 g
Bell pepper75 g
Red onion25 g
Tomato75 g
Cucumber50 g
Cilantro5 g
Lime30 ml

Instructions

Rinse quinoa under cold water.

Combine quinoa and 300 ml water in a small saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed. Let stand covered for 5 minutes, then fluff with a fork.

While quinoa cooks, slice the chicken breast into thin strips.

In a small bowl, toss chicken strips with olive oil, cumin, smoked paprika, chili powder, salt, and black pepper.

Heat a non-stick skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned.

While chicken cooks, finely chop the bell pepper, red onion, tomato, and cucumber.

In a large bowl, combine the cooked quinoa, cooked chicken, chopped vegetables, and fresh cilantro.

Squeeze the juice of one lime over the bowl. Toss gently to combine.
