Quick Chicken Fajita Stir-fry

Ingredients (Serves 1)

Chicken breast, thinly sliced250 g
Bell peppers (mixed colors), sliced150 g
Yellow onion, sliced80 g
Olive oil10 ml
Chili powder5 g
Cumin3 g
Paprika2 g
Garlic powder1 g
Salt2 g
Black pepper0.5 g
Lime juice10 ml
Cooked rice (optional, for serving)100 g

Instructions

In a bowl, toss the sliced chicken with chili powder, cumin, paprika, garlic powder, salt, and black pepper. Let marinate for at least 5 minutes while you prepare vegetables.

Heat olive oil in a large skillet or wok over medium-high heat.

Add sliced bell peppers and onion. Stir-fry for 4-5 minutes until slightly softened and beginning to char in spots.

Push vegetables to one side of the skillet and add the marinated chicken.

Stir-fry the chicken for 4-5 minutes, or until cooked through and no longer pink.

Stir the chicken and vegetables together.

Squeeze fresh lime juice over the mixture.

Serve hot, optionally over cooked rice.
