- Corn50 g
- Black bean50 g
- Salsa30 g
- Lime10 ml
- Cilantro5 g
- Chili powder3 g

Instructions

Cook the rice according to package directions (if not using pre-cooked). If using quick-cook rice, this can often be done in parallel with the chicken/veg.

Slice the chicken breast into thin strips. Slice the bell pepper and onion into strips.

In a bowl, toss the chicken strips with chili powder, cumin, smoked paprika, garlic powder, and salt. Let marinate while you prep vegetables (minimum 5 minutes).

Heat oil in a large skillet over medium-high heat. Add the seasoned chicken and cook, stirring frequently, for 5-6 minutes until cooked through and slightly browned. Remove chicken from the pan and set aside.

Add the sliced bell pepper and onion to the same skillet. Sauté for 5-6 minutes until softened and slightly charred.
