Ingredients (Serves 1)

Chicken breast180 g
Bell pepper120 g
Onion50 g
Corn50 g
Black bean50 g
Rice60 g
Cheddar cheese15 g
Salsa30 g
Lime10 ml
Cilantro5 g
Chili powder3 g
Cumin2 g
Smoked paprika1 g
Garlic powder1 g
Salt1 g
Oil10 ml

Instructions

Cook the rice according to package directions (if not using pre-cooked). If using quick-cook rice, this can often be done in parallel with the chicken/veg.

Slice the chicken breast into thin strips. Slice the bell pepper and onion into strips.

In a bowl, toss the chicken strips with chili powder, cumin, smoked paprika, garlic powder, and salt. Let marinate while you prep vegetables (minimum 5 minutes).

Heat oil in a large skillet over medium-high heat. Add the seasoned chicken and cook, stirring frequently, for 5-6 minutes until cooked through and slightly browned. Remove chicken from the pan and set aside.

Add the sliced bell pepper and onion to the same skillet. Sauté for 5-6 minutes until softened and slightly charred.

Add the corn and black beans to the skillet with the vegetables and heat through, about 1-2 minutes.

Return the chicken to the pan and stir to combine.

Assemble the bowl: Place cooked rice in the bottom of a bowl. Top with the chicken and vegetable mixture. Sprinkle with shredded cheddar cheese, salsa, fresh cilantro, and a squeeze of lime juice.
