Carrot45 g
Onion45 g

Chicken Broth45 ml
Brown Rice85 g
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Cook brown rice according to package directions. (Can be pre-cooked for faster meal prep).

While rice cooks, dice chicken breast into 1-inch pieces. Thinly shred cabbage. Dice carrot and onion. Mince garlic.

Heat olive oil in a large skillet over medium-high heat.

Add chicken to the skillet and cook until lightly browned, about 4-5 minutes. Season with salt and pepper.

Add onion, carrot, and garlic to the skillet. Sauté for 3 minutes until softened.

Stir in shredded cabbage and chicken broth. Cover and cook for 3-5 minutes, or until cabbage is tender-crisp.
