Quick Chicken & Broccoli Stir-fry with Brown Rice

Chicken Breast170 g
Brown Rice85 g
Broccoli130 g
Carrot60 g
Soy Sauce30 ml
Ginger10 g
Garlic6 g
Sesame Oil7.5 ml
Olive Oil5 ml
Salt1 g
Black Pepper0.5 g

Instructions

Cook brown rice according to package instructions. This usually takes 20-25 minutes, so start this first. (Cook time for this recipe focuses on stir-fry portion).

While rice cooks, slice chicken breast into thin strips. Chop broccoli into florets and carrots into thin rounds or matchsticks. Mince ginger and garlic.

Heat olive oil in a large skillet or wok over medium-high heat.

Add chicken strips and cook for 4-5 minutes until browned and cooked through. Remove from pan and set aside.

Add broccoli and carrots to the pan. Stir-fry for 3-4 minutes until vegetables are tender-crisp. If needed, add a splash of water to steam.

Add minced ginger and garlic to the pan, stir-fry for 30 seconds until fragrant.

Return chicken to the pan. Pour in soy sauce and sesame oil. Stir to combine and heat through for 1 minute.
