Chicken Breast175 g
Brown Rice45 g
Broccoli100 g
Carrot50 g
Spring Onion25 g
Soy Sauce15 ml
Sesame Oil5 ml
Ginger5 g
Garlic1 clove

Instructions

Cook brown rice according to package directions. (Takes ~20-25 mins, start before prep).

While rice cooks, slice chicken breast into thin strips. Chop broccoli into florets, slice carrots thinly, and chop spring onions.

Mince ginger and garlic.

Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken strips and stir-fry for 3-4 minutes until lightly browned and cooked through.

Add broccoli and carrots to the pan. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

Stir in minced ginger, garlic, and chopped spring onions. Cook for 1 minute until fragrant.

Pour in soy sauce and toss everything to combine. Cook for another minute.

Serve the stir-fry immediately over the cooked brown rice.
