Potatoes180 g
Carrots100 g
Onion60 g

Instructions

Dice the chicken breast into 1-inch pieces. Peel and dice the potatoes and carrots into small, uniform cubes. Mince the onion and garlic.

Heat the olive oil in a large non-stick skillet or pan over medium-high heat.

Add the diced chicken to the hot pan and cook for 4-5 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the pan and set aside.

Add the diced potatoes, carrots, onion, and minced garlic to the same pan. Season with salt, black pepper, and thyme. Cook for 8-10 minutes, stirring occasionally, until vegetables are tender-crisp and lightly browned.

Return the cooked chicken to the pan with the vegetables. Stir to combine and heat through for 1-2 minutes. Serve hot.
