Quick Chicken and Lentil Skillet with Spinach

Ingredients (Serves 2)

Chicken Breast200 g
Lentils150 g
Spinach75 g
Tomato100 g
Onion50 g
Garlic5 g
Olive Oil12.5 ml
Vegetable Broth50 ml
Cumin0.5 tsp
Paprika0.5 tsp

Instructions

Step 1: Dice chicken breast into 1-inch pieces. Mince garlic, chop onion, and dice tomato.

Step 2: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes until browned on all sides. Remove chicken from skillet and set aside.

Step 3: Add chopped onion to the skillet and sauté for 2-3 minutes until softened. Stir in minced garlic, cumin, and paprika, cooking for 1 minute until fragrant.

Step 4: Add diced tomato, drained and rinsed lentils, and vegetable broth to the skillet. Bring to a simmer, then return the cooked chicken to the pan. Season with salt and pepper.

Step 5: Stir in the spinach until it wilts, about 1-2 minutes. Serve hot.
