Quick Chicken and Cheese Quesadilla

Ingredients (Serves 1)

Chicken breast, diced into small pieces150 g
Whole wheat tortilla (medium)45 g
Shredded cheese (cheddar or Mexican blend)30 g
Onion, sliced15 g
Bell pepper, sliced15 g
Olive oil5 ml
Chili powder2 g
Cumin1 g
Salt1 g
Black pepper0.5 g
Salsa, for serving30 g

Instructions

Heat olive oil in a pan over medium-high heat.

Add diced chicken and cook until browned and cooked through, about 5-7 minutes.

Add sliced onion and bell pepper and cook until slightly softened, about 3-5 minutes.

Season the chicken and vegetables with chili powder, cumin, salt, and pepper. Stir to combine.

Remove the chicken mixture from the pan and set aside.

Place the tortilla flat in the same pan over medium heat.

Sprinkle half of the shredded cheese over one half of the tortilla.

Spoon the chicken and vegetable mixture over the cheese.

Sprinkle with the remaining cheese.

Fold the other half of the tortilla over the filling.

Cook for 3-4 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted and gooey.

Cut into wedges and serve with salsa.
