Quick Chicken and Cabbage Stir-Fry with Quinoa

Chicken Breast200 g
Quinoa45 g
Cabbage150 g
Carrot50 g
Olive Oil15 g
Soy Sauce15 ml
Ginger5 g
Garlic2 cloves

Instructions

Step 1: Cook quinoa according to package instructions (typically 1 part quinoa to 2 parts water, simmer for 15 minutes, then let stand).

Step 2: While quinoa cooks, dice chicken breast into bite-sized pieces. Thinly slice cabbage and julienne carrots. Mince ginger and garlic.

Step 3: Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from the pan and set aside.

Step 4: Add cabbage and carrots to the same pan. Stir-fry for 3-4 minutes until slightly tender-crisp. Add minced ginger and garlic and stir-fry for 1 minute until fragrant.

Step 5: Return chicken to the pan. Pour in soy sauce and toss everything to combine. Cook for another 1-2 minutes until heated through.

Step 6: Serve the chicken and vegetable stir-fry immediately over the cooked quinoa.
