Cut chicken breast into 1-inch cubes. Slice cabbage into thin strips. Dice carrots, onion, and potatoes into small, uniform pieces (about 0.5-inch).

Heat olive oil in a large skillet or deep pan over medium-high heat. Add chicken and cook for 3-4 minutes until lightly browned. Remove chicken from the pan and set aside.
