Quick Beef Strips with Bell Peppers, Onion, and Buckwheat

Ingredients (Serves 2)

Beef200 g
Bell Peppers200 g
Onion100 g
Buckwheat100 g
Water200 ml
Garlic10 g
Olive oil20 ml
Oregano5 g
Thyme2 g
Salt2 g
Pepper1 g

Instructions

Rinse 100g of buckwheat under cold water. Bring 200ml of water to a boil in a small pot, add the buckwheat, reduce heat to low, cover, and simmer for 12 minutes until water is absorbed (approx. 1 minute prep + 12 minutes cook).

While the buckwheat cooks, thinly slice 200g of beef into strips (approx. 2 minutes).

Wash and slice 200g of bell peppers and 100g of onion (approx. 3 minutes).

Mince 10g of garlic (approx. 1 minute).

Heat 20ml of olive oil in a large pan over high heat. Add the beef strips and sear quickly for 2-3 minutes until browned (approx. 3 minutes). Remove beef from the pan and set aside.

Add the sliced bell peppers and onion to the same pan. Sauté for 4-5 minutes until slightly softened (approx. 5 minutes).

Add the minced garlic and 5g of dried oregano and 2g of dried thyme. Cook for 1 minute until fragrant (approx. 1 minute).

Return the beef to the pan. Season with 2g of salt and 1g of pepper. Toss to combine and cook for another 1 minute until heated through (approx. 1 minute).

Fluff the cooked buckwheat with a fork (approx. 1 minute).

Serve the beef and vegetable mixture alongside the buckwheat.
