Extra lean ground beef (5% fat)200 g
Olive oil5 ml
Yellow onion, diced50 g
Garlic, minced5 g
Zucchini, diced100 g
Frozen or canned corn, drained80 g
Chili powder3 g
Ground cumin2 g
Smoked paprika1 g
Dried oregano1 g
Salt1 g
Black pepper0.5 g
Water or beef broth30 ml

Instructions

Heat olive oil in a large skillet over medium-high heat.

Add ground beef and cook, breaking it up with a spoon, until browned, about 5-6 minutes.

Drain off any excess fat if necessary.

Add diced yellow onion and minced garlic to the skillet and cook for 2-3 minutes until softened.

Stir in the diced zucchini and corn.

Add chili powder, cumin, smoked paprika, oregano, salt, and pepper.

Pour in the water or beef broth and stir to combine.

Bring to a simmer, cover, and cook for 5-7 minutes, stirring occasionally, until zucchini is tender.
