- Potato150 g

Instructions

Cut the lean beef into 2 cm cubes. Thinly slice the mushrooms. Peel and dice the potatoes into 1.5 cm cubes. Chop the onion and mince the garlic. (6 minutes)

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and sear on all sides until browned, about 4 minutes. Remove beef and set aside. (4 minutes)

Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and smoked paprika, cooking for 30 seconds until fragrant. (3.5 minutes)

Stir in the tomato paste, then add the diced potatoes, sliced mushrooms, beef broth, fresh thyme, and bay leaf. Bring to a simmer. (3 minutes)

Return the seared beef to the pot. Reduce heat to low, cover, and simmer for 10 minutes, or until beef is tender and potatoes are cooked through. (10 minutes)
