Quick Beef and Bell Pepper Stir-Fry with Couscous

Ingredients (Serves 2)

Bell Peppers305 g
Onion102 g
Garlic20 g
Ginger10 g
Couscous61 g
Soy Sauce20 ml
Rice Vinegar10 ml
Cornstarch5 g
Olive Oil10 ml
Salt2 g
Pepper1 g

Instructions

Prepare the couscous: Bring 250 ml of water or broth to a boil in a small pot. Add a pinch of salt, stir in the couscous, cover, remove from heat, and let stand for 5 minutes.

While the couscous steeps, slice the beef against the grain into thin strips. Slice the bell peppers and onion into thin strips. Mince the garlic and ginger.

In a small bowl, whisk together the soy sauce, rice vinegar, and cornstarch until smooth.

Heat the olive oil in a large pan or wok over high heat until very hot but not smoking.

Add the beef strips and stir-fry for 2-3 minutes until browned on all sides. Remove the beef from the pan and set aside.

Add the sliced bell peppers and onion to the pan and stir-fry for 3-4 minutes until slightly softened but still crisp.

Add the minced garlic and ginger to the pan and stir-fry for 30 seconds until fragrant.

Return the beef to the pan. Stir the sauce mixture and pour it over the beef and vegetables. Stir constantly for 1-2 minutes until the sauce thickens and coats everything.

Fluff the couscous with a fork.

Serve the stir-fry immediately over the couscous.
