Pre-made seitan300 g
Canned kidney beans (drained and rinsed)250 g
Canned corn (drained and rinsed)200 g
Shredded cabbage100 g
Shredded carrot100 g
Bell pepper100 g
Pumpkin seeds50 g
Olive oil20 ml
Apple cider vinegar15 ml
Nutritional yeast30 g
Smoked paprika5 g
Garlic powder3 g
Salt2 g
Black pepper1 g

Instructions

If seitan is in large pieces, slice or dice it.

Quickly chop the bell pepper.

In a large bowl, combine seitan, drained and rinsed kidney beans, drained and rinsed corn, shredded cabbage, shredded carrot, and chopped bell pepper.

In a small bowl, whisk together olive oil, apple cider vinegar, nutritional yeast, smoked paprika, garlic powder, salt, and black pepper to make the dressing.

Pour the dressing over the bowl ingredients and add the pumpkin seeds.

Toss gently to combine.
