Instructions

Peel and cube potatoes. Boil in salted water until very tender, about 10-12 minutes.

While potatoes cook, slice pork loin into 1-inch thick medallions. Season generously with salt and pepper.

Heat olive oil in a skillet over medium-high heat. Sear pork medallions for 3-4 minutes per side, until golden brown and cooked through. Remove from pan and set aside.

Roughly chop the wild garlic and chard. In the same skillet, melt half of the butter. Add chard and sauté for 3-5 minutes until wilted. Season with a pinch of salt.
