Pork Loin with Sautéed Leeks and Boiled Potatoes

- Potato250 g
- Leek100 g
- Thyme2 g
- Rosemary2 g
Instructions

Step 1: Peel and dice the potatoes into 2 cm cubes. Place them in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for 8-10 minutes, or until tender. Drain well.

Step 2: While potatoes cook, slice the pork loin into 1-inch thick medallions. Season both sides with salt, black pepper, thyme, and rosemary. Wash and thinly slice the white and light green parts of the leek. Mince the garlic.

Step 3: Heat 5ml of olive oil in a skillet over medium-high heat. Add pork medallions and sear for 3-4 minutes per side, until golden brown and cooked through. Remove pork from the pan and let it rest.

Step 4: Add the remaining 5ml of olive oil to the same skillet. Add sliced leeks and minced garlic. Sauté for 4-5 minutes until leeks are softened and fragrant. Serve the pork medallions with sautéed leeks and boiled potatoes.
