Pork Loin with Braised Cabbage and Apples

Ingredients (Serves 1)

Pork Loin220 g
White Cabbage250 g
Apple100 g
Onion50 g
Olive Oil20 ml
Vegetable Broth100 ml
Apple Cider Vinegar10 ml
Caraway Seeds2 g
Salt2 g
Black Pepper1 g

Instructions

Slice the pork loin into 1/2-inch thick medallions. Thinly slice the white cabbage and onion. Core and slice the apple.

Heat half of the olive oil in a large skillet or frying pan over medium-high heat. Season the pork medallions with salt and pepper.

Add the pork to the hot skillet and sear for 2-3 minutes per side until golden brown. Remove pork from the skillet and set aside.

Add the remaining olive oil to the skillet. Add the sliced onion and cook for 2 minutes until softened. Add the sliced cabbage and stir well.

Pour in the vegetable broth and apple cider vinegar. Add the caraway seeds. Bring to a simmer, then cover and cook for 5 minutes, stirring occasionally, until the cabbage is tender-crisp.

Stir in the sliced apple and return the pork medallions to the skillet. Cover and cook for another 2-3 minutes, or until pork is heated through and apples are slightly softened. Serve hot.
