Potatoes100 g
Cabbage200 g
Apple50 g
Onion50 g
Garlic5 g
Olive Oil7.5 ml
Apple Cider Vinegar7.5 ml
Chicken Broth100 ml
Caraway Seeds2.5 g
Salt1 g
Pepper1 g
Paprika1 g

Instructions

Cut the pork loin into 2 cm thick medallions (2 minutes). Season generously with 2g salt, 2g pepper, and 2g paprika (1 minute).

Peel and thinly slice the onion (1 minute). Mince the garlic (0.5 minutes). Core and slice the apple (1 minute). Thinly slice the cabbage (2 minutes). Peel and dice potatoes into 1.5 cm cubes (2 minutes).

Heat 7.5ml of olive oil in a large pan or Dutch oven over medium-high heat (0.5 minutes). Sear the pork medallions for 3-4 minutes per side until golden brown (7 minutes). Remove pork from the pan and set aside.

Add the remaining 7.5ml of olive oil to the pan (0.5 minutes). Add diced potatoes and cook for 5 minutes, stirring occasionally, until lightly browned.

Add sliced onion and minced garlic to the pan and sauté for 2 minutes until fragrant.

Stir in the sliced cabbage, sliced apple, 15ml apple cider vinegar, 200ml chicken broth, and 5g caraway seeds. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes, or until cabbage is tender (10 minutes).

Return the pork medallions to the pan, nestling them into the cabbage. Cover and cook for an additional 3 minutes, or until pork is fully cooked through (3 minutes).

Serve the pork medallions with the braised cabbage, apples, and potatoes.
